Betty’s Sweet Potatoes
Sweet Betty Townsend has always shared the best recipes. I didn’t grow up eating sweet potatoes, but once we started making this one, we don’t have a holiday without it. We even take the ingredients if we will be traveling!
Betty’s Sweet Potato Casserole
THE BEST Sweet Potato casserole — hands-down.
Ingredients
Sweet potatoes base
- 3 c mashed sweet potatoes 3 lg or 46 oz canned
- 1 c sugar
- 1 tsp vanilla
- 2 eggs
- 1/2 c butter
- 1/2 jar marshmallow cream
Topping
- 1 c chopped pecans
- 1 c brown sugar
- 1/3 c Bisquick
- 1/3 c softened butter
Instructions
- Mix together all base ingredients with a mixer and spread in a 9×12 greased pan.
- Mix together topping ingredients and spread on top of the sweet potatoes.
- Bake uncovered at 350 degrees for 30 min.
